Preheat oven to 350°F.
Lightly grease your sheet pan.
Place the chicken thighs on your your sheet pan spaced apart so that they are not touching.
Either drizzle or rub olive oil over the chicken skin. Try to get as much covered as you can.
Gently shake or sprinkle your desired amount of Italian seasoning, garlic powder, and onion powder onto the chicken thighs while maintaining full coverage.
Gently shake a small amount of kosher salt onto the chicken thighs. Remember, a little goes a long way.
Gently shake your desired amount of red chili flakes onto the chicken thighs.
Optionally, add ground black pepper for more kick.
Bake in oven for 45-60 minutes until the skin browns, is crunchy, and the internal temperature reaches at least 165°F.
Remove from oven and let rest for 5 minutes before serving.
